Some may call Santi Taura a Renaissance man - he wears many hats: chef, artist, potter, nature lover, historian. Every passion is tied to his roots in Mallorca - a native son of the island. From locals to Spanish royalty, diners have been enjoying Santi Taura's cooking for many years. He opened Restaurant Santi Taura in the town of Lloseta in 2003 - a special location as it has been his grandmother's home. In 2016 Santi added DINS in an old carpentry on the back of the building in 2016. With the opening of El Llorenç Parc de la Mar hotel, DINS Santi Taura relocated to the historic heart of Palma in 2019 and was awarded a Michelin star in 2021 generating even greater international interest in his uniquely Majorcan cuisine.
Santi has always felt a strong connection to the earth and nature and brings that with him into the restaurant in many ways. He is is now creating pottery - all dishes are hand molded by him - and some are created for a specific dish that he serves in the restaurant. At times the glaze is embedded with soil and he also uses twigs from the forest to create a design into the clay - his connection to nature and Mallorca the earth couldn't be more present.
